Stuffed bell peppers

Dishes could be tasty even when they are exclusively made of vegetables. During various religious fasting periods observed during the year, only dishes made up of vegetables can be eaten, whereas meat, eggs, lard, milk and other animal products are completely avoided.
For this edition of our cookery show we invite you to try a recipe of rice-stuffed bell peppers for which we need about 10 bell peppers, 3-4 onions, several tomatoes, oil, salt, peppercorns and green parsley. First we sauté the finely chopped onion in oil. Mushrooms can be added also finely chopped. Tomato juice, a broth of vegetables or a mixture of water and two spoonfuls of tomato juice can be poured over the sautéed onion. Then we add a cup of rice and let them simmer for about 20 minutes until rice starts to swell. The mixture is seasoned with salt to taste.
Then bell peppers are cleaned, carefully removing all the extra seeds; stuff them with the aforementioned mixture of rice, vegetables and spices. Cover the open end with a slice of tomato. Place the stuffed bell peppers into a stew pan together with tomato slices and a bit of water. The stew pan is let into the oven to boil for half an hour. Take the stew pan out and sprinkle finely chopped parsley over the dish after 20-25 minutes of boiling. This meal can be served hot or cold.
