Today’s recipe is sour soup with cured bacon than can be made with potatoes and cabbage. Take one kilogram of cured meat, one head of sauerkraut, two onions, several cloves of garlic, two tablespoons of flour, a cup of sour milk and fresh dill.
Before starting to prepare this dish, bear in mind one little secret: blanch the cured meat, be it ham or gammon, before putting it in the stockpot, because by boiling, part of the salt is eliminated.
Cut the cured meat into cubes and leave to boil in the pot. Rinse the sauerkraut leaves and chop finely, chop the onion and then add into the pot. In a different pot fry flour in oil, then add a cup of water and bring to boil, later adding it to the stockpot. When the mixture is almost cooked pour in the sour milk or the sour cream mixed with a raw egg. Add extra salt if needed, the dill and the garlic finely chopped.
