Vegetable stew
Romanians, just like many other Balkan people, eat a lot of pork around the winter holidays. However, a lot of people feel the need to lay off the meat heavy diet, and start resorting to traditional recipes based on vegetables. And there are plenty to choose from.

Romanians, just like many other Balkan people, eat a lot of pork around the winter holidays. However, a lot of people feel the need to lay off the meat heavy diet, and start resorting to traditional recipes based on vegetables. And there are plenty to choose from.
The advantage of this concoction is that it can be made from fresh or canned vegetables, or a combination thereof.
This dish is designed to feed 8 to 10 people. Here are the ingredients: one kilogram of potatoes, 3 or 4 carrots, one small head of cabbage or cauliflower, about half a kilogram, five medium sized onions, 200 grams of green beans, 200 grams of green peas, vegetable oil, tomato paste, salt and pepper to taste. You can use eggplant or sweet pepper at your discretion.
Cube the potatoes, the courgettes and the celery root, slice the carrots, finely chop the cauliflower or cabbage, then julienne the onion and the sweet pepper.
Lightly sautee the onion in the oil, then put in a boiling pot, along with the rest of the vegetables, which we add in the order of cooking. The canned vegetables you might use go in later. When they are cooked, add one tablespoon of tomato paste and the finely chopped garlic, then put in the oven at medium heat for about half an hour.
Restrain from stirring the vegetables, as they may get mashed. This recipe can be made with the meat of your choice. Enjoy!
