Traditional Chicken Preparations

For this we need to prepare a strong stock, which, when chilled, turns into a flavorful gelatin that is a staple of festive winter meals. Which is why you need the boniest parts of the chicken, such as wings or the back, along with the feet and the head.

For this we need to prepare a strong stock, which, when chilled, turns into a flavorful gelatin that is a staple of festive winter meals. Which is why you need the boniest parts of the chicken, such as wings or the back, along with the feet and the head.
All you need is a couple of onions, two carrots, a head of garlic and a few sprigs of green parsley. Bring very slowly to a boil all the ingredients in a roomy pot, and remove the scum that forms on top. Add salt to taste towards the end. Boil until the meat easily falls off the bones. Strain carefully the stock, removing all the chicken parts, the vegetables and the impurities. Separately, take the meat off the bones and shred.
Take the serving bowls, as many as you need, and distribute the shredded meat in all of them, making sure you just cover the bottom. Mash the garlic well, and similarly distribute it in every bowl. Fill the bowls with the stock, then chill thoroughly, so that the stock turns into a beautiful aspic, which you then garnish with parsley leaves.
One other popular recipe is a simple oven roasted chicken, which in the Romanian countryside is often made with apple or quince. You can use a whole chicken or just thighs, a few potatoes, two apples or quinces, and a couple of onions. Use either a deep oven dish or a traditional clay oven dish. Baste the chicken with oil, put in on top of the vegetables and fruit cut into cubes, season with salt and pepper and roast for about 45 minutes on medium heat. Enjoy!
