The Pancakes Caravan
The Pancakes Caravan is not the name for a desert, but it is a festival organized in Prejmer, in the central Romanian county of Brasov. The festival has reached its 9thedition and originates in a Saxon celebration called “Fasching” which marks the beginning of Lent. Legend has it that this custom is meant to ‘tame’ nature and chase away evil spirits. They say the young Saxon men in the Brasov area, before leaving their homes for the military service, used to walk around the village to bid farewell to people and give them pancakes, not to forget them. A party used to be organized in the evening, which gathered all the villagers. Everybody knows how to make pancakes so today we’ll present to you a special pancake batter, which contains grated apples.

Everybody knows how to make pancakes so today we’ll present to you a special pancake batter, which contains grated apples.
Here are the ingredients you need: one glass of flour, one egg, half a glass of milk, half a glass of mineral water, oil, sugar and salt, and one or two apples. Mix the flour with the egg in a bowl, and then add the milk to obtain a creamy mixture. Add a pinch of salt and sugar and the grated apples and leave the mixture in the fridge for half an hour. Add a drop of oil in a frying pan and place on a high flame and then add a ladle of batter. Fry on both sides. The pancakes can be filled with various conserves or chocolate. They can also be served without any filling, just with a sprinkle of powdered sugar. Enjoy!
