Fish can be cooked in many different ways: you can have meatballs or rounds made of minced fish as an appetizer, fish soup and, why not, stuffed fish. The latter is a dish that requires both cooking and manual skills.
You need one or two whole pikes, around a kilo each. You also need two eggs, a cup of rice, 2 onions, a bunch of green parsley, black pepper, thyme and basil. The first stage, after we eviscerate the fish, is to remove the head leaving it attached to the skin, which should be very carefully removed after delicately scaling it. This is important later, for the visual aspect of this dish. Take the skinned fish, sprinkle it with salt and rest it in the fridge while you do the rest. Set the rice in some water to soak. Boil the fish to easily separate the meat from the bones. Mince the meat together with the chopped onion, then mix in the soaked rice, then add the eggs and the finely chopped parsley and finally knead the whole thing into a paste with the salt, pepper and herbs. Place this mixture in the skin of the fish as a filling, trying to shape the stuffed fish as close to the original shape as possible. You may want to secure the belly cut so as to avoid spilling. Place the fish in a deep oven dish, covering with water. Set the dish in the oven for about half an hour, adding tomato paste towards the end. You can serve this dish hot, or you can refrigerate and slice it. You can also serve it with plain carrot and potato boiled in the oven dish with the fish.
The meatballs can be prepared using all sorts of fish. However, favorite are bigger fish with larger of fewer bones, like the cat fish.

We need one kilo of fish, two or three onions, a couple of garlic cloves, two eggs, a little bit of flour, pepper and salt. For some versions of this recipe, mashed potatoes are used. In other versions, all we have to do is use the crumb of two slices of bread. Irrespective of the version, though, never forget to use a bunch of dill. Remove the bones and peel the fish. Grind the meat and, in a bowl, mix the resulting paste with finely chopped onions, the dill, also finely chopped, slices of bread and the eggs. Add salt and pepper to taste. Add the garlic to the mix. Use your hand to homogenize the mix and to detect and remove the fish bones that may have remained in the ground mix. Use a spoon to form the meatballs, then roll them in flour before frying in a pan.
