Roasted Pork
Since many people in Romania usually store pork cuts in the freezer for the winter, today we will be talking about a delicious pork steak. You will need a big-sized cut of pork leg or shoulder, with extra fat on it if possible. Finely cube the meat and leave it to simmer, over a low-heat, in a pot, adding a bit of lard optionally. Finely chop two medium-sized onions and add them to the mix, together with some tomato juice or paste and a glass of water, and leave to simmer. Towards the end, add a glass of wine, several finely chopped garlic cloves, some thyme, pepper and salt to taste. This sort of steak must be served hot, with polenta or mashed potatoes.

Alternatively, you can cook pork leg in the oven. You will need a leg of pork of about 1.5 kg. Slice it about an inch thick. Make small cuts on its sides, to prevent slices from bending while roasting in the oven. Put the meat chops onto a large platter. Add a bit of water and tomato juice to cover the meat. You can also put in a few finely chopped garlic cloves, some ground thyme and pepper and leave to roast over a low heat for about 45 minutes. During this time, if the gravy level drops too low, you can add some more tomato juice, or why not, a glass of wine. This steak can be served with a side dish of mashed potatoes or a pickle salad.
Before cooking it, you can marinade the pork chops to tenderize the meat. In the very platter used for cooking, you can layer the pork chops and cover them with red wine and seasonings. You will need a finely chopped head of garlic, some dried thyme, pepper, two bay leaves and some salt. Leave the meat to marinade for several hours before putting it into the oven. Serve with mashed potatoes and pickle salad.
