Pork Tenderloin
The summer brings with it lots of opportunities to go out to picnics, where barbeques are the norm. Usually, people in Romania grill chicken and pork, which are easier to cook than beef. Pork tenderloin is a staple, cut into smaller pieces and seasoned with thyme, basil and black pepper. However, it is not the only way to cook tenderloin. One way of cooking it at home is braided tenderloin cooked in the oven. Take one piece of tenderloin, cutting it lengthwise in three strips, which you braid, holding the ends in place with a toothpick. You can also spike the braid with cloves of garlic and pieces of bacon. After coating with oil, place it in the oven and cook at medium heat for about 45 minutes.

One other recipe is tenderloin with herbs. For this you need a special piece of cooking gear, large covered vessels made of a special porous clay. The vessel is essential in cooking this recipe, which has to first be immersed in water to soak for about 15 minutes. Place on the bottom a mixture of peas, green beans and mixed vegetables, such as potatoes, onion, green pepper and tomatoes. Cut the tenderloin into smaller strips and lay it on top. Cover the vessel, and place it in the cool oven, which you then fire up and let heat gradually. Once it is done, remove the cover to roast the meat well, for about 15 minutes. Enjoy!
