Apricots
One suggestion involves 3 kg of apricots and one kilogram of sugar. Wash and pit the apricots, then put them into a deep soup pot covered in sugar until they start seeping out juice. Set to boil for half an hour, then take out the fruit with a spider. Let the remaining syrup boil for another half hour, stirring occasionally. Put the fruit back in the pot, then boil for a few more minutes. Pour the resulting preserve into jars, then let them cool very slowly, using a blanket to cover them. After cooling, put the jars into a tray that you place in the oven, and only after that turn on a low heat, leaving them in for a quarter of an hour, then take out and let them cool again.

In order to get apricot jam, use the same steps, except that this time you have to mash the fruit you take out of the pot. Make sure you stir at regular intervals to prevent sticking. To check if the jam is ready, dip a wooden spoon into the mixture and let drip on a plate. If the drips are firm, then your jam is ready. Apricot jam is great for making cake.
To make fresh apricot cake, you need a quarter of a kilo of flour, 100 grams of sugar, a cup of milk, 50 grams of butter, two eggs, baking powder, and as many apricots as you want. Mix the flour, sugar, butter and baking powder, mix in the eggs, and keep adding milk until the mixture is creamy. Pour into a deep oven tray lined with baking paper. Put on top halves of apricots, then put in the oven on medium for about half an hour. Enjoy!
