Apple Cake
It is a simple recipe with simple ingredients, easy to make but utterly delicious. You need 6 or 7 large apples, 200 g of sugar, a little butter, a handful of shelled walnut, three eggs, 1 pinch of baking soda, three tablespoons of flour, a pinch of salt, and the shredded rind of half a lemon.

It is a simple recipe with simple ingredients, easy to make but utterly delicious. You need 6 or 7 large apples, 200 g of sugar, a little butter, a handful of shelled walnut, three eggs, 1 pinch of baking soda, three tablespoons of flour, a pinch of salt, and the shredded rind of half a lemon.
Core the apples. Put the walnuts into a round buttered vessel with high walls. Put the apples on top of the walnuts. Put half a teaspoon of butter inside each of the apples, then sprinkle the apples and walnuts with the sugar. Pour in a cup of water, then set the vessel in oven until the apples soften.
Meanwhile, make the dough for the cake. Beat the eggs with 3 tablespoons of sugar until the sugar dissolves. Mix the flour with the baking soda, then mix in a tablespoon of lemon juice. Mix the flour taking care not to form clumps, then add the lemon rind.
When the apples are done, pour in the dough, then set in the oven once again. Keep an eye on it, because it will bake very fast. You can prick the dough with a toothpick to check if it is done. Take the cake out of the oven, let rest for a few minutes, then carefully turn the vessel upside down over the serving plate. Decorate with powdered sugar if you like. It makes a great light and healthy dessert for the kids. Enjoy!
